gluten free breakfast idea recipe

one of my favourite quick breakfast recipes served on delicious warburtons gluten free tiger bread! poached eggs and smoked salmon is such a winning combination in this gluten free breakfast idea.

ingredients list: (click to expand)

  • smoked salmon

  • two medium eggs

  • gluten free bread (I used warburtons gluten free tiger loaf)

  • butter/spread of your choice

  • asparagus

  • vinegar (I used white wine vinegar)

  • sprinkle of salt, pepper and dried parsley

 

method:

1. bring a pan of water to a gentle boil, adding a sprinkle of salt and 1 tbsp of vinegar (I used white wine vinegar). crack your eggs into separate dishes if you have them, this will make life easier! whisk the water and gently tip in the eggs away from each other as best as you can

2. let the eggs gently boil in the water, using a slotted spoon to remove any scuzz from the pan, remember to pop your bread in the toaster if you like at this point! if you wanted to add the asparagus, you could boil it in the egg pan or gently sauté it in a saucepan alongside.

3. after about 3 minutes, use a slotted spoon to remove your egg from the pan and prod it gently with a teaspoon to check if it's done. it shouldn't be too soft or firm! lay your eggs on a clean kitchen towel or paper towel to soak up most of the water.

4. butter your bread/toast and drain/remove the asparagus. I decided to lay my smoked salmon on the toast before adding my eggs but you can do whatever kind of assembly you like.

5. carefully lift your eggs into place on your plate using your spoon and sprinkle with sea salt, cracked black pepper and any herbs you like (I used dried parsley). make sure to take the runny egg shot!
