gluten free traybake recipe

a fantastic dinner, lunch or tea gluten free traybake idea that can be meal prepped in advance and frozen! a gluten free recipe, full of delicious vegetables and all done in two trays (or one if you prefer) - bonus!

ingredients list: (click to expand)

a little bit of a looser ingredients list this time!

  • butternut squash

  • broccoli

  • green beans

  • tomatoes

  • pork belly slices

  • feta cheese

so these are the core ingredients I used, drizzling the pork belly with a mixture of olive oil, chinese five spice, cumin, smoked paprika, brown sugar, salt and pepper

 

method:

1. chop the butternut squash, green beas, brocolli and feta into chunks

2. drizzle the butternut squash with olive oil, salt and pepper and toss into a baking tray, cut up the pork belly slices and drizzle with olive oil and seasonings of your choice (see ingredients list for what I used), toss into a separate tray and cook both at around 200 degrees c for 25 minutes.

3. after 25 minutes, flip the belly pork slices and add the feta, tomatoes, brocolli and green beans to the other tray. mix together and cook both trays for a further 25 minutes.
